In this installment, we're leaning into fresh spring flavors and turning a cozy morning favorite into a show-stopping brunch plate. Together, we'll create golden Strawberries & Lemon Waffles, made with fluffy buttermilk batter infused with lemon zest and vanilla, then piled high with juicy macerated strawberries and clouds of whipped lemon mascarpone. Improvised during a busy weekend, it was originally created with romaine lettuce, garlic oil, eggs, parmesan, and Worcestershire sauce. It became popular in Hollywood, famously popularized as a "finger food" tableside creation. In this class you will learn how to make the ultimate Caesar salad, right down to the croutons. We'll add a filet of grilled salmon and pair it perfectly with wine selected by our Chefs. We’ll pair them with a bright, homemade tartar sauce, featuring fresh herbs, citrus, and just the right balance of tang.</p> <p>Next, we’ll create a refreshing summer pasta salad, packed with seasonal ingredients and tossed in a light, zesty dressing that highlights the best of warm-weather produce. Alongside it, you’ll roast a colorful medley of summer vegetables to bring out their natural sweetness and depth of flavor.</p> <p>To finish, indulge your sweet side with a classic strawberry shortcake. In this class, you’ll work in teams to build a bold and balanced taco feast—layering bright citrus, smoky chiles, fresh herbs, and crisp textures. At the heart of the menu is Cochinita Pibil, a traditional Yucatecan dish with deep roots in Mayan cooking. Historically, pork was marinated in achiote and sour orange, then wrapped in banana leaves and slow-roasted in an underground pit called a pib. The result is incredibly tender, citrusy, and richly seasoned meat—an iconic dish that reflects the region’s history, ingredients, and technique. You’ll learn how to recreate these flavors using modern methods while preparing fresh accompaniments like vibrant salsas, pickled onions, and a refreshing ceviche.
